Real Beef Enchiladas, Spanish Rice, Refried Beans!
My mother’s side of the family is from Mexico. My dad’s side is from England. My mom and grandma taught me how to cook Mexican food. It’s not the fancy schmancy stuff you see in restaurants. It’s simple, yet amazingly delicious food (chicken mole, sopa, enchiladas, flour tortillas, menudo, salsa). Grandma was always cooking and always smiling. She’d hand me a fresh homemade tortilla right off the stove with a little butter on it. The smell and taste of the food is comforting to me and brings a smile to my face. Thank you grandma! I love you.
Filling: 1 # Ground Beef or Chicken 1 large onion 2 cloves garlic 7 oz can green chilies 2 beef bouillon cubes 1 tsp black pepper 1 tsp cilantro ½ tsp cumin 1 tsp chili powder 1 tsp paprika 1 tomato 1 avocado sour cream shredded lettuce 12 oz shredded cheddar Sauce: 1/4 cup butter 1/4 cup flour 1 tsp paprika 1 tsp chili powder 3 beef bouillon cubes 1 tsp cilantro 1 tsp cumin 1 tsp pepper 2 1/4 cup water Spanish Rice: 2 tblsp butter ½ tsp paprika ½ tsp chili powder 1 cup uncooked rice 1 small onion 1 clove garlic 1 cup diced tomatoes 1 ½ cups water ½ tsp cumin ½ tsp black pepper 1 chicken bouillon 1 tsp cilantro









I tried this. I t was fantastic !
Leftovers the next day were maybe even better. The flavors were wonderful.

looks fantastic gotta try that but i use oregano as well is that not part of the enchiladas and chili recipes?
@thinkorthwim69 My mom used oregano. My gramma doesn’t. It definitely is a good spice to use in lots of mexican cooking. Go for it!
@Praxxus55712 tks for your reply and may i say living in australia pinto beans are harder to find sooo there is a bean called berlotti which is very similar in taste and texture I also make a dish with beans onion and bacon bones and eat it with hot cornbread with chile flecks in the cornbread from my upbringing in texas tks again

@wisesatyr72 That’s flour. It is used to thicken the sauce a little.
I think you should make more video’s just make sure your camera has enough battery. I enjoyed watching you cook.

@favianapartida If all you’re going to do is hate, then why don’t you just move on? I come from a big Mexican family and have a lot of Mexican friends and if there’s one thing I know for sure, it’s that EVERYONE has a different way of cooking. And you know what? They ALL taste great! Your way isn’t the only “correct” way to make enchiladas. Please get over yourself!
@bradyischamp dont use canned, get the kind that comes in an envelope, like the instant taco seasing…it’s real good and easy.
@nopachucoel hi, i am in tx. we microwave the corn tortilla, to avoid the fat from frying but then we add EXTRA CHEESE!lol
