Preheattheovento325F.Creamtogethertheshorteningandsugar
withanelectricmixer.Addtheegg,salt,andpeanutbutterand
beatuntilwellblended.Puttheoatsinablenderandblendon
mediumspeeduntiltheyarealmostasfinelygroundasflour.Add
theoatsandflourtothemixtureandblendwell.Rolloutdough
withyourhandsinto1inchballs.Pressthemflatontoungreased
cookiesheetssothattheyform2−inchcircles.
Bakefor8to10minutes,oruntillightbrownaroundtheedges.
Whilethecookiesbake,combinethefillingingredientsinasmall
bowl.Whenthecookiesarecool,spreadathinlayeroffilling
onacookieandpressanotherontop.
