My cousins are first generation Arab immigrants from Ramallah and they tell me that Hummus has Lemon and Tahini in it…and they make Hummus all the time.
But I guess any “dip”/snack/cultural food such as this will have many deviations over the centuries, this is a really old dish.
i wouldnt just dip food in it. id dip my head in!
i think im addicted to the stuff now – i eat it with practically every meal and its not really that bad for you and its helped me cut down on loads of junk food for healthy alternatives =]
Thanks for showing us how to make it…
It is very expensive in the stores..

Kuhmoon? We call it kuhmoon? Who calls it kuhmoon? Who is we? I’ve never heard anyone call it kuhmoon. It’s spelled cumin, I’m not sure how you would get kuhmoon.
Heiken! Heiken!
I feel sorry for anyone who doesn’t put lemon in their hummus. Why wouldn’t you want lemon?
I don’t know about that. I’ve used canned chick dozens of times and I prefer my hummus to any I’ve tried, from stores or restaurants. I do rinse them well before adding them, maybe that makes a difference.
Because in the mediterranean food are many sour dressings to combinate with meal or even with humuss the thina is prepared with lemon, or the labne is sour but the humus is to taste a creamed and soft taste of garbanzos not to aded to food sour (personal opinon) but I respect all kind of taste every one likes
That’s a lot of damn oil she used…
I don’t care what she says about olive oil being “healthy”….THAT’S A LOT.
do you really need Tahini?
Cumin is native to the middle east and its pronounce Kammūn in Arabic.
@terrysan
Not really when you consider how it is distributed throughout the entire mass. When you consider the fat content of mayonnaise or cream cheese, it isn’t that much.
you should never use minced garlic! Fresh garlic is cheap enough and minced garlic DOES taste different than the crap minced garlic in a jar!
actually moroccan hummus where the chickpeas are steamed fresh and the olive oil used is very very dark tastes better!
Yes on the Tahini. It really does impart a certain special flavor to the hummus. I would not use as much olive oil as she does. At least not add more to the top.
I thought that her lemon tips were good!
I am lebanese and i always eat hummus but i didn’t know that yogurt & kammoun are to be added to this plate !! Sincerely, it didn’t inspire me a lot but i might try it this way one day
This is the best recipe ive ever found for hummus [and ive tried many!] The yogurt and cumin really makes it delicious.
I just don’t understand why people like Humus? I guess Iv’e got no sense of humus he he
Zohan like hummus
Thank you so much!
I just love how you present this recipe, how you basically make a little show of it, but with integrity and anecdote. I may not make sense, but anyway… love it and will make it tomorrow. I had humus in London when my Libanese friend made it for me and I probably won’t do that amazing a job, but I will try. Apart from the Tahini (sp?) I have all the ingredients. Will buy it then. Thanks! You should have TV show. x
Do you need to store the tahini in the fridge? I don’t.
Thank you Recipe Cook. A great recipe. I will try this myself as I love humus.
Thanks for posting!
@mtnluke You can mince garlic simply in a garlic press. All you need are around 3 cloves, crush it with the garlic press and put it into the humous before processing. Tastes delicious and not like the crap you get in supermarkets/
