    The propane would make it cook faster, & some say cleaner. At least Hank would agree on that cartoon. If you don’t have the patients for charcoal that would be the way to go. And yes would chips would be good in the pan, but remember to let the chips soak! If you don’t the wood will burn. Of course burn, but not get the effect that you acquire. Try it & let me know how it turns out.

    Question for anyone who knows BBQ: Instead of injecting or mopping, do you get the same results if you marinate the meat for a couple of days?

    @lago4 I recommend brining instead of marinating (they are similar, but brines tend not to have acid). For a large turkey or pork shoulder, you should brine for about 8 hours. For smaller cuts (like pork chops or chicken breasts) you should go about 2 hours.

    Brining, through osmosis, injects seasoning and a LOT of moisture into meat. I cannot even begin to tell you how much of a difference it makes for pulled pork, Turkeys and barbecue smoked whole chickens. Get a probe thermometer, too.
