Sauce:
1/4cupmayonnaise
2Tablespoonssweetrelish
2Tablespoonsketchup
2teaspoonswater

Inasmallcontainer,combinethemayo,relish,ketchup,andwater.
Setaside.ThisisyourBigBoysauce.
Carefullyformthebeefintoeightequalsized,roundpattiesabout
4″indiameter.Dothisonwaxedpaper.Discardthetophalfoffour
oftheeightbuns.Toastthethebunsuntilgolden.Theextrabottom,
or”heal”isyourmiddlebun,or”club”.
Afterthebunsaretoasted,grillyourfreshlyformedbeefpatties.
Saltliberally.Cookforabouttwominutes,thenturnandaddanother
dashofsalt.Cookforaboutanothertwominutes.
Whilethebeefiscooking,dressyourBigBoybunsasfollows:
Puthalfthesauceonthetoastedbottom,andtheotherhalfonthe
middle,adding1/8cupoflettucetoeach.Thesliceofcheesegoes
ontopofthelettuceonthetruebottombun.
Whenthebeefisdone,drainexcessfatbytiltingthepattytothe
sidewhileholdingittothespatulawithyourfreehand.Putone
pattyoneachdressedbun,stackthecenter(non−cheese)patty/bun
ontopofthebottom(cheesed)patty/bun.Finishbyplacingthe
toastedcrownsontop.
