    quick question. how much coal did you use for the whole cook? looks like 1 chimney unlit charcoal on the bottom, and 1 chimney lit charcoal on top of that? i dont have a wsm so ive always thought pork butt and brisket was out of the question with the performer.

    @bradyischamp your performer will “low and slow” just like the big smokers and the wsm. And the big plus of using a good kettle grill for smoking is that it’s easy to produce a moist cut of meat, not so easily done on the big ol’ smokers. Go for it! -BBQ Pit Boys

    @bradyischamp I smoked a 8 lb pork butt on my new 22.5 one touch gold last weekend. I used 1 chimney full and put between 1/4 to 1/2 chimney full of pre-lit on top along with a couple applewood chunks. She chugged right along and about 81/2 hours later it was done. I still had enough coals to go another 2 to 3 hours if needed. I was impressed to say the least. My big sidebox smoker takes three 18 lb. bags of kingsford to smoke 2 butts of the same size. I want another one already!

    I have to agree with another post below about not thinking I could do a brisket with the equipment I currently have until I saw this video. Now I only wish it was the weekend so I could start one now. I was also about to ask for the slaw recipe until I searched your shows and found you’d already made a video on it as well.
