If you’ve got the time, try freezing these overnight. The freezing opens the muscle tissue for a deeper flavor into the meat. It works for any type of marinade. You can even freeze for 6 months ahead. Buy pork in the winter time when it’s cheapest and smoke ‘em in the summer. It don’t get any better.
